For me, it because it looks like another creature in armor. There is an inherent fascination in the development of who is really under that shell of steel. And for the user, the fascination is when to reveal their true selves.

The head and the helmet gives the personality of the knight, like the face is the only part of the body. Also the colors of the tunic or shield indicates Knight's heritage and family.
